My wife is seeing the same issue after the last update. She also has an iPhone SE. I found this thread on reddit which has a workaround that works. Open up google maps and start navigation somewhere so you have a blue bar at the top of your screen when you're in Pokemon Go. As long as this blue bar is there you will have your move titles. Weird, huh?

Bug after last update.
Hi guys!Got a very annoying bug after last app update- all the move titles are gone, can see only bars and move type icons. Did turn off/on app and the phone (Iphone SE) as well.Didn't help.
So what can it be? Thank you

Looks like the game is optimised for iPhones with a certain aspect ratio, which causes display problems on devices with other aspect ratios. On my iPad, when catching a raid boss, I cannot see how many balls I have left, and when feeding berries to gym defenders, the game often misinterprets my taps and switches to another defender.
