How many of them you recommend to max out? I currently have 3 of them.

Remember that Mamoswine's best moves are not legacy.
If you hatch a perfect Swinub tomorrow, you may regret blowing a million dust on six with subpar IVs.
I am going to max just one, which should be enough to take down flying dragons in gyms and for Lati raids (since I already have other top counters: Dragonites and Tyranitars).
I've actually have a 98% a 91% Lucky and a 96% Maxed out. I also have 2 96% and another 91% on bench, but aparently, Rayquaza still does more damage to Latias (I have 2 maxed out), so...I'll do a mixed team I guess. Also, for community day I just evolve one Ancientpower Mamoswine. The rest of them I've evolved them before or after.

But seriously, it's all about your area. I'm going to max out 4 Mammoswines because it's a regular occurrence for me to need to Short-Man raids (particularly Legendary), and with Latios and Latias coming back (and the expectation for Rayquaza too), Mammoswine is going to be a beast in those raids.
If you don't need to short-man a raid, then pick the best one, power it up, and wait for another Pokémon to come out that's worth powering up.
