Would it be better to unbind duplicate 5-Star Dragons?

I ended up pulling two Leviathan, but I'm not sure if I should unbind or save the extra copy.

Initially, my reasoning for not sacking the extra copy is that I can't reasonably expect to fully unbind any 5-Stars that I pull since they are pretty rare, and I could just use the other copy to boost up another Water unit. However, perhaps the power increase is enough to justify unbinding the extra copy? I really don't know and would appreciate any help that you guys can offer. (I'm still trying to figure out all of this out, so please bear with me.)

Did you max out Leviathan already? Honestly, I'd hold off on it. Reason being, 5*s are so rare, that the game itself doesn't expect you to get dupes to unbind them. They have a system in place for you to grind out Sunlight Ore. 10 Sunlight Ore = 1 Sunlight Stone at the trade in shop. Use 1 of those to unbind your 5* Dragon. That's my advice. In a year's time or w.e you'll be wanting to max unbind that Leviathan for a potential mono-water team. Also even unbinded its still 40% strength to a character.

My first copy is about half-way to max level (before any unbinding) before I pulled the second one, so I'm not in any real urgency to increase the level cap of the Dragon.

Also, I didn't realize that there were other ways to unbind aside from having multiple copies. (I can't access the Item Shop for whatever reason--probably because I'm playing this game on an Android emulator.) I'll take your advice and keep the second one for a different Water character.
