Everything's Better with Princesses
PvE
After you build Doris with all the Spd you can find for her, focus the rest of her stats and substats on making her as tanky as possible. Even if you're not putting her in the front position, there's no reason to ignore her natural survivability. Prioritize HP over Def, as her Def is naturally quite high and her Def buff boosts it up even higher.
For her remaining substat, consider some extra Effectiveness -- since her S1 Hit debuff has such a high base chance of landing -- or Effect Resistance -- since ailments are her weak point, even if you have other characters ready and able to cleanse.
Considering that Doris has no cleanse, it's a natural reaction to put Wondrous Potion Vial on her. However, typically a single Potion Vial cannot handle ailment-cleansing for your entire party, so you will still have to bring other characters to help out, in which case the Vial might be overkill.
This is important because what Doris really wants to use her Artifact slot for is increasing her turn speed. If using her as your main tank, Prophetic Candlestick or Water's Origin are perfect for the task. Otherwise, Magaraha's Tome is a good fallback option if you don't expect Doris to be taking much damage.

Team

This is a very simple sample team that should be easy for a new player to build. The most important aspect here is the synergy between Doris and Jecht, who cover each other's weaknesses admirably: Doris is a powerful healer who lacks cleanse, and Jecht is a talented debuff cleanser who lacks healing. On top of that, Jecht can also grant continuous healing to the entire party like Doris can, which means he can reapply the buff to benefit Doris' S3 in case it runs out before Doris' turn comes around. He even buffs her Spd for her! What a gentleman.
The remaining two party slots can be filled with any DPS units you have available. In this particular example, Lena is a strong AOE unit who can take out waves of trash mobs, and Carmainerose has high damage and potent debuffs to cripple the boss once it arrives.

Analysis
Overview
When you need to survive enormous amounts of damage, Doris is one of the best Soul Weavers to have at your side. She's one of the most comprehensive healers in Epic Seven, combining burst healing, healing over time, and AOE healing into one package. However, she also pulls double duty by mitigating damage before it affects your team in the first place, with a Hit chance reduction debuff on her S1 and an AOE Defense buff for your team on her S2. Though she is ill-suited for PvP, her position in PvE as a steadfast foundation that the rest of the team can rely upon should not be underestimated.
Strengths
Massive Amounts of Healing
On paper, Doris' S2 and S3 don't look that powerful, only healing 15% and 25% of the maximum HP for their targets respectively. Her continuous healing buff is where she really shines. Not only does it double the impact of her S3 -- turning the S3 into a 50% max HP heal even before Skill Enhancements -- but it also lasts for 3 turns when Soulburned. Once Enhanced, Doris' S2 has a 4-turn cooldown, allowing her to keep continuous healing up on the team almost constantly for effortless teamwide healing.
Protects Allies from Damage
Like the subtle effects of her continuous healing, Doris mitigates damage slowly and consistently over time by reducing enemy Hit chance with her S1 and buffing her allies' Def by a whopping 60% with her S2. Like her continuous healing buff, the Def buff lasts 3 turns when Soulburned, which adds up to a lot of nullified damage in the course of a long fight.
Can Take a Hit
Doris is less squishy than some other Soul Weavers like Tamarinne or Hazel, especially considering her Light element, which is only vulnerable to Dark. In some cases, she can even take the front position in a party and serve as both tank and healer (especially if you concentrate her Devotion Aura with an Ego Fragment to give her a large flat HP buff).
Semi-Gear-Independent
Doris really only needs one stat to do her job (Spd). Because her healing is based on the maximum HP of her teammates, she always heals the same amount regardless of her stats, making her relatively substat-independent as long as she gets the Spd she needs. Furthermore, as a 3★ hero, she Skill Enhances with Stigma instead of Molagora, making her even easier to build.
Weaknesses
The Slowest Character in the Game
At 86 max Spd, Doris is the slowest character in Epic Seven. This is far and away her biggest weakness, as her unparalleled healing powers mean nothing if she is too slow to act before her allies fall. Doris requires enormous amounts of Spd on her gear to be viable in high-end content, and since Spd gear is so hotly contested, it can be difficult to spare her any.
Lacks Cleanse
While Doris is excellent at healing HP, she has no ability to cure ailments and debuffs. Considering how incredibly powerful ailments are in Epic Seven, this is another major blow to her viability. If she is running with units like Lilias, Jecht, or Nemunas, who can cleanse ailments for her, then this is not so bad. If you don't have such characters, however, then Doris may not be the best choice.
Vulnerable to Dispels/ Unbuffable
Most of Doris' power comes from maintaining her continuous healing and Def buffs on her team. If those buffs are dispelled, it takes her several turns (at her very slow Spd) to put them back up again. Even worse, if her allies are made Unbuffable then her impact is almost completely neutralized until the ailment wears off, since she can't cleanse debuffs.
